Nutritional therapist Holly Sugars of Food Envy shares her recipe for these healthy, gluten-free hot cross buns which all the family will love.

- Heat the milk and the coconut oil in a pan.
Allow the milk to cool a little - you should be able to dip your finger in and it will feel warm but not hot.
- Mix the flour, salt, sugar, egg and yeast with the warm milk in a mixer with a dough hook or with a wooden spoon. DO this gently, you don’t want to overwork the dough. Do not knead it!
- Place the dough in a bowl greased with coconut oil, cover with cling film and leave to rise in a warm place for 1hr, until it has doubled in size.
- Add the sultanas, mixed fruit orange zest, apple, and cinnamon and mix gently.
- Divide the dough into 100g balls.
Cover with cling film, and lay on a tray to rise for another hour.
- Heat the oven to 220c.
- Using a pastry brush, glaze each bun with an egg wash.
Bake for 20 mins until golden brown.
