Quick and easy recipe for warm apple cakes. This recipe from Garsons at Esher makes great use of seasonal ingredients from their Pick Your Own fields. Enjoy warm from the oven, dusted with icing sugar and served with crème fraiche and fresh blackberries.

- Preheat the oven to 180°C fan/gas mark 7 and grease the cake tin/s.
- In a large bowl, whisk the butter and the caster sugar until pale and fluffy.
- Now, gradually whisk in the beaten eggs.
- Fold in the sifted flour, ground almonds, baking powder and cinnamon and then stir in the milk or yogurt.
- Cut the apples in quarters, then slice very thinly. Spoon the cake mixture evenly into a 12 hole fairy cake tin then top with the apple slices. Bake for 10 – 12 minutes until cooked and golden.
- Allow to cool slightly before turning out. Enjoy warm from the oven, dusted with icing sugar.
- Serve with crème fraiche and fresh blackberries.
