Dorset is known for its delicious apples and what better way to use that glut of windfalls than with this delicious spicy apple cake recipe. Served with a dollop of cream and washed down with a cup of tea or a glass of mulled cider, spicy apple cake is the ideal winter treat to share with friends and family.

- Preheat the oven to 180C/Fan 160C/Gas 4. Grease and line a 20cm round cake tin with baking parchment.
- Peel and core the apples and cut into slices. Put the slices in a bowl and toss with the fresh lemon juice.
- Mix the flour, cinnamon and mixed spice together in a large mixing bowl. Add the butter and rub into the mixture to create a mixture resembling fine breadcrumbs.
- Add and stir in the sugar to the mixture and then beat in the egg. Then pour in the milk until the mixture is nice and thick.
- Add the apples and the sultanas to the mix evenly. Spoon the cake mixture into the prepared tin and gently level out.
- Sprinkle the demerara sugar over the top of the cake and bake in the oven for 30-40 minutes or until well risen and golden on top. A skewer should come out clean when inserted into the middle of the cake.
- Allow the cake to cool in the tin for 15 minutes and then remove from the tin, peel off the baking parchment and turn out onto a wire rack.
- Best served warm with some Dorset clotted cream or fresh custard and washed down with a hot cup of tea or spicy mulled cider.
