Award-winning High Weald Dairy has teamed up with fledgling Surrey business FlaVit Seaweed to produce the Seven Sisters Sheep Cheese with a hint of Hebridean seaweed. As well as bringing a delicate taste of the sea, the seaweed also acts as a salt substitute and flavour enhancer. The cheese has been selling really well.

This isn't the first collaboration for FlaVit, after they teamed up with Chalk Hills Bakery earlier this year to produce a sourdough bread which has also been flying off the shelves. In addition, they have two major food producers trialling the seaweed. It has been going down a storm with the local public as well and FlaVit has just won First Prize for the best food exhibit at the South of England Show in Ardingly.

Mark Gallagher, co-founder of FlaVit with his partner Frances Black, commented: "It's been a great start to the business which launched last September. As a flavour enhancer, salt replacement and highly nutritional addition to the diet, we see many applications for FlaVit from keen chefs to everyday cooks, the health conscious as well as food producers. We're keen to bring seaweed to every kitchen!"
